They can be prepared many hours before your party or before you leave for work so they are ready for feeding time at dinner.
The first option here is what I feel is the most simple. This basic recipe will get you started on understanding how you can apply your own special touches.
Ingredients
Jumbo tortillas; I like the larger ones as you get more stuff on them and you can feed more of your friends and family.
Fresh tomatoes sliced thinly
Grated cheese. Cheddar is the most obvious choice here but try using multiple types of cheese.
Tomato paste
Olive Oil.
Setting up
Lay out you tortilla on the bench and spread the tomato paste with the back of a desert spoon. Dont use too much as it could make the finished result a bit soggy.
Spread out the tomato slices and cheese like you are making a pizza.
Add salt and pepper and any other herbs.
TIP - I like using fresh basil leaves. Chilli is good too if you are making them just for adults.
Lay another tortilla over the top of the other like a sandwich and press down to release any air pockets.
Once you have made a few of these, either cook immediately or wrap in foil tightly and put in the fridge.
Cooking
You can cook these in a fry pan or on the hot plate of you BBQ.
Let the Quesadillas get back to room temperature.
Add just a little olive oil to the pan or hot plate.
Lay the Quesadilla to the fry pan.
Let the Quesadilla cook for about 1 to 2 minutes depending on the heat of your pan or hot plate
You are looking for the edges to curl up just a little to show you they are ready to flip.
Then using your longest spatula or two small ones carefully flip the Quesadilla over. You want some nice browning and see it get just a little crispy.
You need to keep an eye on these as I have burnt a few. But I like them a little darker than some.
The Quesadilla should be ready after another 2 minutes of cooking the other side.
Lay the Quesadilla on a bread board and cut into pizza slices and present on a plate.
Options & Tips
1. You can squeeze lime over the top
2. Put a good dollop of Guacamole and sour cream on top of the slices.
3. Add nice ham, salami or prosciutto along with the cheese as an ingrediant
